The Mock Poultry Show is to replace our traditional Poultry and Waterfowl show, while Avian Flu is a threat. Entries in this show will be displayed in a tent in the agricultural area.
Entries must be hand made by the exhibitor. Any medium or combination of materials may be used; wood, metal, steel, wire, paper, fabric, yarn, recycled materials etc., to create a 3-dimensional bird.
Creations must not exceed 30 cm (12″) in width or depth, and be less than 45 cm (18″) in height. Entry tags must be attached to the birds.

OAAS PHOTOGRAPHY COMPETITION
Junior Division: Youth up to age 15 years (as of December 1st, 2024)
Competition is open to NON-Professional Photographer members of the society.
You must save your photos in high resolution on a USB stick.
Photos must be taken during the 2024 Fair.
ABSOLUTELY no digital image enhancement allowed. All enhanced images will be disqualified.
Judging will be done by a committee approved by the OAAS Convention Manager.
Images will be shown, and awards will be presented at the upcoming OAAS Convention. Prize money will be distributed after the Convention in February. All images will become the property of the OAAS and may be used and posted without compensation or acknowledgement.
Please submit entries no later than November 1st, to the Fair Secretary, PO Box 283, Port Hope, L1A 3W4.

Preheat oven to 350 degrees
CAKE:
2 cups all purpose flour (250 grams)
2 teaspoons baking powder
1 teaspoon bakng soda
1 1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup canola or vegetable oil
4 large eggs at room temp
1 1/2 cups packed light brown sugar (300 grams)
1/2 cup granulated white sugar ( 100 grams)
1 teaspoon vanilla
1/2 Cup Unsweetened Applesauce
3 cups lightly packed grated carrots (300 grams)
FROSTING:
1 (8 ounce) package of cream cheese ( 226 grams )
1 cup butter softened
4 cups powered icing sugar
1 teaspoon vanilla
pinch of salt
INSTRUCTIONS:
1. Spray two 8 inch pans with a non stick cooking spray and line the bottom of the pans with a parchment paper circle.
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt until well combined and set aside.
3.In a separate bowl whisk together the oil, eggs, brown sugar, white sugar, applesauce and vanilla until fully combined. Add the grated carrots to the wet ingredients and mix until well combined.
4. Pour the wet ingredients into the dry ingredients and mix with a whisk until just combined, making sure not to over mix the batter.
5. Pour the cake batter evenly between the prepared pans. Bake for 30 – 35 minutes or until the tops of the cakes are set and a toothpick inserted comes out clean.
6. Remove from oven and transfer to cooling rack, leave in pans for at least 30 mins. Remove cakes from pan and continue to cool on rack
7. Make your icing. In a bowl of a stand mixer or in bowl and use a hand mixer. Beat the cream cheese until smooth, add the softened butter and mix until well combined. Add the powdered sugar and vanilla and continue to mix until combined and fluffy.
8. Fill and ice your cake and feel free to decorate in fall theme. Most of all have fun!

Participants are required to enter one 500 ml jar using the following recipe.
Makes 8 cups (2 L)
6 cups chopped, peeled tomatoes (about 3 lbs/1.5kg)
2 cups finely chopped onions
2 cups each: chopped and peeled peaches, pears and apples
1 cup finely chopped celery
2 sweet green peppers, finely chopped
1 hot red pepper, seeded and finely chopped
1½ cups white or cider vinegar
1 Tbsp pickling spice
1 tsp pickling salt
2 cups granulated sugar
1. Combine tomatoes, onions, peaches, pears, apples, celery, green and hot peppers, and vinegar in a very large stainless steel or enamel pot. Place pickling spice in a tea ball or tie in a piece of cheesecloth. Add spice and salt to pot. Bring to a boil over high heat, reduce heat and boil gently, uncovered, for 1 hour or until thick, stirring occasionally.
2. Stir in sugar. Return to a boil and boil gently, uncovered, for 30 minutes or until thick, stirring occasionally. Remove spice bag.
3. Remove hot jars from canner and ladle sauce into jars to within ½ inch of rim. Process 20 minutes.

Pet Show Rules
1 This show is for children under 14 accompanied by an adult
2 Entries will be accepted 12:00 noon to 1:00 pm – Dog owners have until 1:30 pm to register
3 All dogs must be leashed. All other pets must come in a pet carrier. Cats should not be removed from the carrier unless on a leashed harness.
4 All cats and dogs must have current vaccinations, especially a recent rabies vaccination.
5 The judge’s decision is final. Prizes will be awarded at the end of each class.

The Mock Poultry Show is to replace our traditional Poultry and Waterfowl show, while Avian Flu is a threat. Entries in this show will be displayed in a tent in the agricultural area.
Entries must be hand made by the exhibitor. Any medium or combination of materials may be used; wood, metal, steel, wire, paper, fabric, yarn, recycled materials etc., to create a 3-dimensional bird.
Creations must not exceed 30 cm (12″) in width or depth, and be less than 45 cm (18″) in height. Entry tags must be attached to the birds.
